South of the Border Veggie Tofu Burgers

These veggie tofu burgers are delicious and nutritious with some Mexican flare!

Total Time: 30 minutes
Prep Time: 20 minutes
Yield: 4 servings

Ingredients:
1 carrot, shredded
1 zucchini, shredded
1 10 oz. package silken tofu
1 small yellow onion, diced
1 celery stalk, finely chopped
1 egg, lightly beaten
1 slice whole wheat bread, toasted & diced
2 Tbsp. Mexican hot sauce
1/4 cup fresh cilantro leaves
1 Tbsp. olive oil



Preparation:
1. Press carrot and zucchini between paper towels to remove excess moisture.
2. In a medium bowl, mix carrots, zucchini, tofu, onion, celery, egg, bread, hot sauce and cilantro.
3. Form into 4 patties, about 1/2 an inch think.
4. Heat oil in a large skillet over medium heat.  Cook patties for 5 minutes on each side, or until brown.
