Cauliflower Crust Pizza

I have seen lots of recipes for cauliflower crust pizza and I have been dying to attempt making my own!  It took some trial and error, but I learned that the key is getting all the excess moisture out of the cooked cauliflower in order to get a nice crispy crust that can hold up under your toppings as the finished product!

Prep Time: 10 minutes
Yield: 4 servings


Ingredients:
1 medium head cauliflower, cut into florets
1 egg
1/2 cup skim mozzarella, shredded (1 cup if you're adding more on top)
1 teaspoon oregano or Italian seasoning blend
Salt & pepper to taste
1 cup chicken, cooked and shredded (or any other protein you would like!)
1/2 cup all natural tomato sauce (no added sugar or salt)
Any veggies you would like on top
Have fun with your toppings!

Preparation:
1. Rice the cauliflower in a food processor, place it in a microwave safe dish and microwave for 8 minutes or until cooked.
2. Place the cauliflower in a tea towel and squeeze as much moisture out as you can!!
3. Mix the cauliflower, egg, mozzerella, oregano, salt & pepper well and press the mixture onto a baking mat or parchment paper lined baking sheet and bake in a preheated 450F oven until lightly golden brown, about 15-20 minutes.
4. Put your sauce and toppings on top of the crust and place back into oven until your toppings are hot or cheese is bubbling, about 10 minutes.
