1/3 cup old fashioned oats
1/3 cup skim milk or almond milk
1/2 cup water (make it 1/3 if you like your oatmeal less liquidy)
1/2 banana, slices
1 tbsp. chia seeds
Pinch of kosher salt
Vanilla extract to taste, stirred in at end
For two servings, combine rolled oats, water & milk in a saucepan over medium heat. Slice a banana into VERY thin pieces, leaving just a few big slices. Once it begins to steam or bubble, add the thin banana slices and stir vigorously at times to whip the banana into the oats. The oats will take about 5 minutes on medium heat from start to finish to fully absorb the liquid. The oatmeal is done when it reaches your desired consistency. I then stir in vanilla and portion it into bowls, adding the chunky banana to top of each. Add any toppings you like, such as nuts, coconut, granola, dark chocolate chips or natural peanut butter dollops (my fave!).
